07 - 8 lasagna noodles, broken into pieces
08 - 15 oz ricotta cheese
09 - 1/2 cup grated Parmesan cheese

# Instructions:

01 - Heat olive oil in a large pot over medium-high heat. Brown the ground meat, breaking it up with a spoon. Add the chopped onion and garlic and cook until softened, about 5 minutes.
02 - Add the crushed tomatoes, tomato paste, and a splash of broth to the pot. Stir well to combine.
03 - Stir in the Italian seasoning, salt, pepper, and red pepper flakes (if using).
04 - Add the broken lasagna noodles and the remaining broth to the pot. Bring to a boil, then reduce heat and simmer until the noodles are tender, about 20 minutes.
05 - Gently stir in the ricotta cheese, being careful not to overmix.
06 - Ladle the soup into bowls and top with grated Parmesan cheese and fresh basil (if using).
