01 - 2 lbs beef chuck roast
02 - 2 lbs russet potatoes, peeled and cubed
03 - 1 large onion, chopped
04 - 4 cloves garlic, minced
05 - 4 cups beef broth (low sodium)
06 - 2 carrots, peeled and chopped
07 - 2 celery stalks, chopped

08 - 2 tbsp tomato paste
09 - 1 tbsp Worcestershire sauce
10 - 1 tsp salt
11 - 1/2 tsp black pepper

→ Garnish & Toppings

12 - Fresh parsley, chopped

13 - 1 cup red wine
14 - 1 tsp dried thyme
15 - 1 cup chopped mushrooms
16 - 1/2 cup pearl onions
17 - Sour cream or crème fraîche

# Instructions:

01 - Pat the beef dry and sear it in a hot skillet until browned on all sides.
02 - Sauté the onions, garlic, carrots, and celery in the same skillet until softened.
03 - Transfer the beef and veggies to the slow cooker. Add the broth, tomato paste, Worcestershire sauce, and seasonings.
04 - Cook on low for 6-8 hours or on high for 3-4 hours.
05 - Whisk cornstarch with cold water and stir into the stew during the last 30 minutes of cooking, if desired.
06 - Ladle into bowls and garnish with fresh parsley.

# Notes:

01 - Sear the beef for extra flavor! Don't overcrowd the slow cooker. Taste and adjust seasoning throughout. Leftovers are great for lunch the next day!
